Esta hist\u00f3ria come\u00e7a antes de haver uma padaria. Antes de haver um nome num saco ou um p\u00e3o numa prateleira.<\/p>

Come\u00e7a em Portugal, nas colinas aquecidas pelo sol de Abrantes, numa vinha mais antiga do que a mem\u00f3ria, numa nascente onde a \u00e1gua ainda corre limpa.<\/p>

Antes de haver uma pastelaria, havia um nome.<\/p>

Elizabete, um nome portugu\u00eas, com ra\u00edzes na cidade de Abrantes, distrito de Santar\u00e9m, no cora\u00e7\u00e3o de Portugal central.<\/p>

\u00c9 o nome pr\u00f3prio do nosso fundador.<\/p>

\u00c9 o centro da mesa, uma tradi\u00e7\u00e3o transmitida sem instru\u00e7\u00e3o, absorvida atrav\u00e9s da presen\u00e7a e do tempo.<\/p>

Massa-m\u00e3e artesanal, fermentada naturalmente, moldada \u00e0 m\u00e3o, partilhada generosamente.<\/p>

Em 2020, no auge de um confinamento global, a Elizabete encontrou-se em casa do seu padrinho, no Carregal, no concelho de Alvai\u00e1zere, Portugal.<\/p>

Um dentista profissional. Uma encosta sossegada. M\u00e3os cobertas de farinha pela primeira vez.<\/p>

No sil\u00eancio daquelas colinas, surgiu uma nova voca\u00e7\u00e3o, que ela viria a seguir com o mesmo rigor que sempre dedicara \u00e0 medicina dent\u00e1ria.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t

Uma voca\u00e7\u00e3o n\u00e3o \u00e9 suficiente.<\/p>

A Elizabete encarou o seu novo percurso como uma profiss\u00e3o desde o primeiro dia.<\/p>

Uma certifica\u00e7\u00e3o online em pastelaria. Depois, uma licenciatura em pastelaria pela Universidade do Zulia, a mesma institui\u00e7\u00e3o onde se tinha licenciado em medicina dent\u00e1ria.<\/p>

Depois, as melhores escolas de pastelaria da Europa, incluindo a Galiza, em Espanha, a regi\u00e3o cuja farinha mo\u00edda em moinhos de pedra viria mais tarde a tornar-se um pilar da sua arte.<\/p>

E, finalmente, em 2023, o San Francisco Baking Institute. Tal como a massa fermentada, ela cresceu lentamente e com determina\u00e7\u00e3o.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t

A nossa massa-m\u00e3e tem um nome: Galegas.<\/p>

Nascido de tr\u00eas elementos da Pen\u00ednsula Ib\u00e9rica: uvas da vinha ancestral na aldeia de Galegas, em Alvai\u00e1zere; \u00e1gua da nascente natural na aldeia de Azenha, a metros desse mesmo vinha e da casa onde a fundadora passou a inf\u00e2ncia; e farinha artesanal mo\u00edda em moinho de pedra da Galiza, Espanha.
