Galegas is the name of our sourdough starter, born from three elements of the Iberian Peninsula.

Galegas, Alvaiázere

From the ancestral vineyard in the village of Galegas, Alvaiázere, district of Leiria. A property producing grapes for more than 100 years, beside the ruins of the founder’s paternal grandparents’ 19th-century home.

WATER

Spring of Azenha

From the natural spring in the village of Azenha, meters from the Galegas property and the founder’s childhood home. Associated with São João, Saint John.

FLOUR

Stone-milled, Galicia, Spain

Stone-milled artisan flour from Galicia, Spain, across the border from Portugal, on the same Iberian soil. The third element that completed her.
