FAQs

About the products

Yes. Every order is baked and packaged the same day. Small batches ensure freshness in every item.

Our sourdough loaves and many pastries use our living starter, Galegas. Items like Challah and Soft Baguette use traditional dough. Each product description specifies the method.

Sourdough and Galegas

Galegas is our sourdough starter, a living culture born from three Iberian Peninsula elements: grapes from the ancestral vineyard in Galegas, Alvaiázere; water from the Azenha spring; and stone-milled flour from Galicia, Spain.
Long natural fermentation breaks down gluten and phytic acid, making the bread more digestible and nutritious. The process takes time, which is part of why it tastes the way it does.
No. Most commercial sourdough uses added yeast and flavorings. Ours relies entirely on natural fermentation via Galegas. The process is longer and the result is fundamentally different.
